Data source copy: drop coinos branding, "your own server" not Fulcrum/electrs
Hal stands on its own, so the data-source descriptions shouldn't name coinos:
the Electrum description now says "Point it at your own server … no REST" and the
block-explorer one drops "nothing is sent to coinos".
